    Position Summary
    The dining hall at JCCFS is an integral part of the overall experience provided on-campus. The Culinary Manager will creatively lead the dining hall to provide three nutritious meals a day for approximately 100+ diners and actively participate in creating an environment that is aligned with the Folk School’s mission and values. The position will oversee all dining hall daily operations, menus, and staff schedules. The incumbent will be highly motivated with excellent leadership abilities. The position will report directly to the Deputy Director. This is a full-time, exempt salary, and benefits-eligible position. Hours will include a variety of shifts including day shift, evening shift, holidays, and weekends.

    Position Responsibilities
    • Curates nutritional menus that delight JCCFS constituents.
    • Ensures all recipes, from scratch food preparations and presentations meet the Folk School’s specifications and commitment to quality.
    • Ensures menus are aligned with the Folk School/Appalachian culture and branding.
    • Develops and utilizes sustainable practices that include a focus on using local food and reducing food waste.
    • Works closely with the Folk School Gardener to coordinate on-campus food production.
    • Works with the Special Programs Manager to coordinate Host and Work Study dining hall work duties.
    • Verifies the kitchen staff follows all recipes and portions correctly.
    • Provides professional leadership, direction, and training to the kitchen personnel.
    • Ensures a safe, orderly, and clean kitchen that adheres to all ServSafe, Health Department guidelines, and the highest standards of sanitization.
    • Uses and teaches proper food handling techniques.
    • Ensures the kitchen and storage areas are kept clean and organized.
    • Manages food costing and inventory.
    • Establishes maintenance and cleaning schedules for equipment, storage, and work areas.
    • Handles and resolves constituent complaints.
    • Sets and implements the kitchen policies and procedures; maintains an up-to-date procedure manual.
    • Manages a productive work environment while maintaining a positive work-life balance for all employees.
    • Ensures the front-of-house constituent experience is positive and reflective of the Folk School brand.
    • Works with dining hall staff to manage and evaluate annual strategic plan tactics for food services.
    • Schedules staff to meet dining hall needs, approves, and monitors staff hours, and submits time cards and timesheets.
    • Hires, teaches, leads, and evaluates the dining hall staff.
    • Prepares, maintains, and adheres to the annual budget.
    • Participates in the planning, organization, and execution of occasional JCCFS sponsored events, and parties.
    • Other duties as assigned.

    Education and Experience Requirements
    • Five years of experience in a commercial kitchen or restaurant as a Head Chef required.
    • College or culinary training preferred.
    • Understanding of the proper use and maintenance of commercial kitchen equipment.
    • Commitment to and understanding of health and safety food-related guidelines.
    • Understands and can train other staff on dietary restrictions and varying diets.
    • Must have a valid driver’s license.
    • ServSafe Certification.

    • The ability to efficiently navigate and utilize computer software programs including Microsoft Outlook and Word.
    • Ability to work well under pressure and with others in a time-sensitive environment.
    • Demonstrates strong leadership skills.
    • Demonstrates exceptional customer service.
    • Ability to adapt.
    • Basic math skills.

    Physical Demands
    The position requires the employee to be able to walk unaided up and down hills and over uneven terrain, bend, stoop, and have use of fine and gross motor skills. The employee is frequently required to use hands to handle, or touch objects, tools, or controls and to speak clearly and effectively. Ability to work standing for at least 8 hours a day and lift up to 50 pounds. Must be able to work weekends and holidays.
